Future projects
As soon as I've built a sous-vide machine, I'll do some thorough testing (in the name of science, of course) and post the results here.
I've had a breadmaker for a while, but I've been less than happy with the results. So recently I've taken to making bread by hand, and I'm finally getting some good results. Watch this space for my experimentation with quantities of ingredients, kneading methods and times, cooking temperatures, and anything else I can do to try and get that perfect loaf.
Chinese is one of my favourite kinds of food, and beansprouts are a pretty integral part. But you only need to cook with them once to discover that they really don't keep very long. Wouldn't it be great if you could have a fresh batch on hand whenever you need them? Also, dried mung beans are cheap as chips, so sprouting them at home makes so much sense! Unfortunately, producing those lovely thick, crunchy sprouts like you buy in the supermaret is easier said than done – to date my breanspouts have been rather thin and weedy. But I'm determined to crack it!
